Loretta's Potato Clouds
2 to 3 cups mashed potatoes, cooled 2 slightly beaten egg yolks 2 teaspoons minced onion 1/2 teaspoon salt 1 teaspoon baking powder 1/4 cup plain flour 2 teaspoons snipped parsley (optional) 2 stiffly beaten egg whites
Mix all ingredients except egg whites. Then, gently fold egg whites in. Drop by teaspoonfuls into hot fat. Cook until puffs are golden brown. Drain on paper towels. Keep in a 300 degree oven until all are cooked. Serve hot.
