Loretta's Polynesian Casserole
1 large can yams, drained and sliced 1 banana 1 eight ounce can pineapple tidbits (Do NOT drain) 1/4 teaspoon salt 1/4 cup flaked coconut
Arrange yams and thickly sliced banana in a 10" X 6" baking dish. Then, pour pineapple, including juice, over all. Sprinkle with salt. Bake at 350 degrees for 15 minutes. Sprinkle with coconut, baking for 15 minutes more. Serves 4.
This is especially good as a side dish with ham.
